Fresh and Easy Pineapple Salsa

Tis the season for hot days, cold drinks, and BBQ’s with friends. I love summer, and to kick off this long weekend I’m making a simple salsa that is bursting with flavours and beautiful to serve…with a twist. What’s the twist? If you read the title of this post then I’m sure you’ve already guessed… its a salsa made with pineapple!

Pineapple?! What?!?! Crazy I know, but trust me, summer salsas are so yummy with a little bit of fruit in them. I love this salsa because its fresh, unique, and pairs nicely with classic summer cocktails like  Mojitos or my favourite  spicy grapefruit margarita.

So here is how to make this o so easy salsa that is sure to get you some oooo’s and ahhh’s at your next get together:


  • Whole Fresh Pineapple
  • Tomatos
  • Red Bell Pepper
  • Red Onion
  • Cilantro
  • Lime


1.Make your pineapple Bowl- Cut your pineapple in half, then hollow it out. I found the easiest way to do this is by cutting around the entire edge of the pineapple, then making a bunch of slices across the fruit. Next use a spoon to scoop out all of the fruit, and drain the excess juice.

2.Dice your pineapple, tomatoes, pepper, onions, and cilantro into small pieces and mix it all together in a bowl. Squeeze out half a lime and add some salt. If you want to add a bit of kick to your salsa, you can also cut a jalapeño and add it.

3. Once everything is mixed, fill your hollowed out pineapple half with salsa.

Yup, thats it. This salsa is as easy as chop-chop-mix-mix, and enjoy. Now its time to lather on the sunscreen, grab a bag of tortilla chips and enjoy the long weekend!

    We’re transitioning into monsoon where I’m at, but your pictures immediately transported me to a hot summer day, tasting all these wonderfully cooling flavours just from the description. Will definitely try it out.
