02 Nov Pork and Apple Stuffed Acorn Squash
I know what your thinking…hey Steph, I want another squash recipe. Okay, okay, if thats what you really want then read on because I might have just what you are looking for!
Todays squash of choice? The acorn squash, a beautiful winter squash with a slightly nutty flavour. I first came across a version of this recipe on BuzzFeed Acorn Squash Video, and highly recommend checking it out. Not only is it a video, but it also has a song that will make you happy dance around your kitchen while learning a new recipe (win, win if you ask me). Over the past year I have tweaked the original happy dance recipe a bit, so enjoy!
- 1 Onion
- 2 Celery sticks
- 2 Cloves of Garlic
- 1/2 Ground pork or sausage
- 1 Apple
- 1 Cup bread crumbs (or smashed up soda crackers)
- 1/4 Grated parmesan cheese
- 1/4 cup chopped pecans
Bake at 400 for 40 minutes.
Step 1- Cut the pointy ends off of the sides of your squash, this way the squash can sit like a little bowl…because we all know how fun it is to eat your meal out of a squash bowl. Next cut your squash in half and scoop out all of the seeds and stringy ‘yucky stuff’.
Drizzle olive oil over the top, and season with salt and pepper. Stick it in the oven and let it bake into a yummy soft bowl while you prepare your stuffing.
Step 2-In a large pan cook your onion and celery in oil, then add your garlic and pork. After your pork is browned, mix in your apple and cook until softened. Next, mix in your bread crumbs, dill and most all of your parmesan cheese (leave out a little to top your meal at the end).
Step 3- When your squash is done, fill with your stuffing, top with the rest of your cheese and then let it bake for another 15 mins, or until the cheese has started to brown.
Step 4-Start inviting people over so they can see how crafty your are with all of your yummy stuffed squashes!
